  • 1 cup peas
  • 1/2 cup celery, diced
  • 1/2 cup onion, chopped
  • 3 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken or turkey broth
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 2 cups biscuit bake mix (for topping)
  • 2/3 cup milk (for biscuit topping)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add onions, carrots, and celery; sauté until vegetables are tender, about 5 minutes.
  3. Stir in flour, garlic powder, thyme, salt, and pepper, and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in broth and milk, cooking until mixture thickens and bubbles.
  5. Add cooked turkey and peas; stir to combine. Remove from heat.
  6. Transfer filling to a 9-inch pie dish or similar baking dish.
  7. In a bowl, mix biscuit baking mix and 2/3 cup milk until just combined.
  8. Drop spoonfuls of biscuit dough evenly over the turkey mixture.
  9. Bake in preheated oven for 20-25 minutes or until biscuit topping is golden brown and cooked through.
  10. Let cool for 5 minutes before serving.

Notes

For extra flavor, sprinkle shredded cheddar cheese over the filling before adding the biscuit topping. Serve with a fresh green salad for a complete meal.
