Turkey Cranberry Quesadillas

Deliciously savory and sweet, Turkey Cranberry Quesadillas combine tender turkey, tangy cranberry sauce, and melted cheese for a perfect quick meal or snack.

  • 4 large flour tortillas
  • 2 cups cooked turkey, shredded
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cranberry sauce
  • 1/4 cup sliced green onions
  • 1 tablespoon butter
  • Optional: sour cream or ranch dressing for serving

Instructions

  1. Heat a large skillet over medium heat and melt half the butter.
  2. Place one tortilla in the skillet and evenly sprinkle with 1/2 cup shredded turkey, 1/4 cup cheese, 2 tablespoons cranberry sauce, and some green onions.
  3. Top with another 1/2 cup cheese and cover with a second tortilla.
  4. Cook for 3-4 minutes until the bottom tortilla is golden and the cheese begins to melt.
  5. Carefully flip the quesadilla and cook the other side for another 3-4 minutes until golden and cheese is fully melted.
  6. Remove from skillet, let cool for a minute, then cut into wedges.
  7. Repeat with remaining ingredients to make a second quesadilla.
  8. Serve warm with sour cream or ranch dressing if desired.

Notes

For extra flavor, add a sprinkle of chopped fresh cilantro or a dash of smoked paprika inside the quesadilla before cooking.
