Tortellini Soup

A comforting Italian-inspired tortellini soup featuring cheese-filled pasta in a savory broth with fresh vegetables and herbs, perfect for a hearty meal.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup carrots, sliced
  • 1 cup spinach, chopped
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 4 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken or vegetable broth and diced tomatoes with their juice. Stir in carrots, dried basil, and oregano.
  4. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes until carrots are tender.
  5. Add the cheese tortellini and cook according to package instructions, usually about 5 minutes, until tender.
  6. Stir in chopped spinach and cook for another 2 minutes until wilted.
  7. Season the soup with salt and pepper to taste.
  8. Ladle soup into bowls and garnish with grated Parmesan cheese if desired. Serve hot.

Notes

For extra protein, add cooked shredded chicken or sausage. Garnish with fresh basil leaves for additional flavor.
