Superbowl Food Nourish Bowl

A vibrant and wholesome nourish bowl packed with fresh vegetables, grains, and protein, perfect for a healthy and satisfying Superbowl meal.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup chopped kale
  • 1/2 cup shredded carrots
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • 1/2 cup cooked black beans
  • 1/4 avocado, sliced
  • 2 tbsp crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, chopped kale, shredded carrots, cherry tomatoes, cucumber slices, and black beans.
  2. In a small bowl, whisk together olive oil, lemon juice, ground cumin, salt, and pepper to make the dressing.
  3. Pour the dressing over the quinoa and vegetable mixture and toss gently to combine.
  4. Top the bowl with sliced avocado and crumbled feta cheese.
  5. Serve immediately or chill for 15 minutes to let flavors meld.

Notes

For added protein, try topping the bowl with grilled chicken or tofu. Drizzle with hot sauce for a spicy kick.
