spicy miso ramen

Spicy miso ramen is a flavorful Japanese noodle soup featuring a rich miso broth with a spicy kick, topped with tender noodles and fresh vegetables for a comforting meal.

  • 4 cups chicken or vegetable broth
  • 2 tbsp red miso paste
  • 1 tbsp chili garlic sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 servings ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 soft-boiled egg, halved
  • 1 cup baby spinach
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • Sesame seeds for garnish

Instructions

  1. In a pot, heat sesame oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  2. Add broth, miso paste, chili garlic sauce, and soy sauce. Stir well and bring to a simmer.
  3. Add shiitake mushrooms and cook for 5 minutes until tender.
  4. Meanwhile, cook ramen noodles according to package instructions, drain and set aside.
  5. Stir baby spinach into the broth and cook until just wilted.
  6. Divide noodles into bowls and ladle hot broth and vegetables over them.
  7. Top with shredded carrots, green onions, soft-boiled egg halves, and sprinkle with sesame seeds.
  8. Serve immediately and enjoy your spicy miso ramen.

Notes

For extra heat, add a dash of chili oil or sliced fresh chili peppers before serving.
