Slow Cooker Italian Beef Sandwiches

Tender, flavorful Italian beef cooked slowly to perfection and served on crusty rolls, making a hearty and satisfying sandwich ideal for easy weeknight dinners or game day gatherings.

  • 3 lbs beef chuck roast
  • 1 packet Italian dressing mix
  • 1 packet dry au jus gravy mix
  • 2 cups beef broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 8 Italian sandwich rolls
  • Optional: giardiniera or sliced banana peppers for topping

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the beef chuck roast on all sides.
  2. Place the browned roast in the slow cooker.
  3. Sprinkle Italian dressing mix, au jus gravy mix, garlic powder, onion powder, and black pepper evenly over the beef.
  4. Pour beef broth over the seasoned roast.
  5. Cover and cook on low for 8 hours or high for 4-5 hours until the beef is tender and shreds easily.
  6. Remove the beef from the slow cooker and shred using two forks.
  7. Return shredded beef to the slow cooker and mix into the juices to soak up flavor.
  8. Serve hot on Italian sandwich rolls, topped with giardiniera or banana peppers if desired.

Notes

For extra moist sandwiches, ladle some of the cooking juices over the shredded beef before serving. Giardiniera adds a spicy, tangy crunch perfect for balancing the rich meat.
