Roasted Red Pepper Hummus Wraps

Deliciously creamy roasted red pepper hummus wraps packed with fresh veggies and flavorful spices, perfect for a healthy and satisfying lunch or snack.

Ingredients

  • 4 large whole wheat tortillas
  • 1 cup roasted red pepper hummus
  • 1 cup fresh spinach leaves
  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, grated
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Lay each tortilla flat on a clean surface.
  2. Spread 1/4 cup of roasted red pepper hummus evenly over each tortilla, leaving about an inch border.
  3. Layer spinach leaves evenly over the hummus.
  4. Add cucumber slices, grated carrot, red onion, and cherry tomatoes on top of the spinach.
  5. If desired, sprinkle crumbled feta cheese over the vegetables.
  6. Drizzle each wrap lightly with olive oil and season with salt and pepper to taste.
  7. Carefully roll up each tortilla tightly to form a wrap.
  8. Slice each wrap in half diagonally and serve immediately, or wrap tightly in foil for later.

Notes

For extra protein, add grilled chicken or chickpeas. These wraps are great served with a side of fresh fruit or a crunchy salad.
