Pomegranate Glazed Lamb Chops

Succulent lamb chops glazed with a tangy and sweet pomegranate sauce, perfect for an elegant dinner that balances rich flavors and a vibrant finish.

  • 8 lamb chops
  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon balsamic vinegar
  • Pomegranate seeds for garnish

Instructions

  1. Season the lamb chops with salt, pepper, and half of the chopped rosemary.
  2. Heat olive oil in a skillet over medium-high heat and sear the lamb chops until browned, about 3-4 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add pomegranate juice, honey, balsamic vinegar, and remaining rosemary to the skillet. Bring to a simmer and reduce until the glaze thickens, about 8-10 minutes.
  5. Return lamb chops to the skillet, spoon the glaze over them, and cook for an additional 2-3 minutes to coat and warm through.
  6. Plate the lamb chops, drizzle with remaining glaze, and garnish with fresh pomegranate seeds before serving.

Notes

For a complete meal, serve with roasted vegetables or a light couscous salad to complement the tangy glaze.
