Peanut Noodles are a creamy, flavorful Asian-inspired dish featuring tender noodles tossed in a rich peanut sauce, perfect for a quick and satisfying meal.

  • 8 oz noodles (rice noodles or spaghetti)
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup warm water
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts (for garnish)
  • Fresh cilantro leaves (optional)

Instructions

  1. Cook noodles according to package instructions until al dente. Drain and rinse with cold water to stop cooking.
  2. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and red pepper flakes.
  3. Add warm water gradually to the peanut sauce mixture until smooth and creamy.
  4. Toss the cooked noodles with the peanut sauce until evenly coated.
  5. Garnish with sliced green onions, chopped peanuts, and cilantro if desired.
  6. Serve immediately or chill for a refreshing cold noodle dish.

Notes

For added protein, serve with grilled chicken or tofu. Adjust the water to reach your preferred sauce consistency.
