Deliciously wholesome Peanut Butter Banana Oat Bars combine natural sweetness with hearty oats and creamy peanut butter for a perfect snack or breakfast on the go.

  • 2 ripe bananas, mashed
  • 1 cup natural peanut butter
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine mashed bananas, peanut butter, honey, and vanilla extract. Mix until smooth.
  3. Add rolled oats, cinnamon, and salt to the wet mixture, stirring until fully combined.
  4. Fold in mini chocolate chips if using.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Remove from oven and let cool completely before cutting into bars.

Notes

For a crunchier texture, toast the oats beforehand or add chopped nuts. These bars can be stored in an airtight container for up to 5 days.
