Peach Cobbler Cheesecake

This Peach Cobbler Cheesecake combines creamy cheesecake with sweet, spiced peaches and a buttery cobbler topping for a decadent, comforting dessert.

  • 2 cups fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine sliced peaches, 1/4 cup sugar, cinnamon, and lemon juice. Set aside to macerate.
  3. In a large bowl, beat the cream cheese and 3/4 cup sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually fold the dry ingredients into the cream cheese mixture until just combined.
  7. Pour half of the batter into the prepared pan. Layer the macerated peaches evenly over the batter.
  8. Pour the remaining batter over the peaches, smoothing the top.
  9. Drizzle the melted butter evenly over the top of the batter.
  10. Bake for 60-70 minutes, or until the cheesecake is set and golden on top.
  11. Allow to cool completely on a wire rack, then refrigerate for at least 4 hours before serving.

Notes

For extra crunch, sprinkle chopped pecans over the top before baking or serve with a dollop of whipped cream.
