Oven-Crisped Parmesan Potatoes

Crispy on the outside and tender on the inside, these oven-crisped Parmesan potatoes make a flavorful and easy side dish perfect for any meal.

  • 4 large russet potatoes, peeled and cut into wedges
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the potato wedges with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  3. Arrange the potatoes in a single layer on the prepared baking sheet.
  4. Sprinkle the grated Parmesan evenly over the potatoes.
  5. Bake for 25-30 minutes, turning once halfway through, until the potatoes are golden brown and crispy.
  6. Remove from oven and garnish with chopped fresh parsley if desired. Serve warm.

Notes

For extra crispiness, soak the potato wedges in cold water for 30 minutes before baking to remove excess starch, then pat dry.
