Maque Choux with Sausage Corn is a flavorful Southern Creole dish combining tender corn, smoky sausage, and sautéed vegetables for a comforting and hearty meal.

  • 4 cups fresh corn kernels (about 6 ears)
  • 1/2 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 medium tomato, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1/4 cup heavy cream
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same skillet, add butter. Once melted, sauté onion, green bell pepper, and garlic until softened, about 5 minutes.
  3. Add fresh corn kernels and cook, stirring occasionally, until corn begins to brown lightly, about 7-8 minutes.
  4. Stir in diced tomato, smoked paprika, cayenne pepper (if using), salt, and black pepper. Cook for another 3 minutes until tomatoes soften.
  5. Return sausage to the skillet and mix well. Pour in the heavy cream and cook for 2-3 minutes until heated through and creamy.
  6. Remove from heat and garnish with chopped fresh parsley. Serve warm as a side or main dish.

Notes

For extra depth, try adding a splash of hot sauce or a pinch of thyme. This dish pairs wonderfully with crusty bread or steamed rice.
