Lemon-Herb Chicken Nourish Bowl

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 4 cups mixed salad greens
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 avocado, sliced (optional)

Instructions

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper to make the marinade.
  2. Place the chicken breasts in the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat a grill or skillet over medium heat.
  4. Grill the chicken breasts for 6–7 minutes on each side or until fully cooked and juices run clear.
  5. Let the chicken rest for 5 minutes, then slice into strips.
  6. In a large bowl, assemble the mixed greens, cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  7. Toss the salad with a little olive oil and lemon juice if desired.
  8. Top the salad mixture with the sliced chicken and avocado slices if using.
  9. Serve immediately and enjoy your fresh Lemon-Herb Chicken Nourish Bowl.

Notes

For extra flavor, sprinkle some feta cheese or toasted pine nuts on top before serving.
