Jalapeno Poppers Nourish Bowl

A vibrant and flavorful nourish bowl featuring spicy jalapeno poppers paired with fresh vegetables and wholesome grains for a balanced, satisfying meal.

  • 4 large jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup chopped romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup corn kernels
  • 1/4 cup diced red onion
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix cream cheese and shredded cheddar cheese in a bowl until well combined.
  3. Stuff each jalapeno half with the cheese mixture.
  4. Place stuffed jalapenos on a baking sheet lined with parchment paper.
  5. Bake for 15–20 minutes until cheese is melted and jalapenos are tender.
  6. In a large bowl, combine cooked quinoa, brown rice, black beans, romaine lettuce, cherry tomatoes, corn, and red onion.
  7. Drizzle olive oil over the bowl, season with salt and pepper, and toss to combine.
  8. Serve the baked jalapeno poppers on top of the grain and vegetable mixture.
  9. Garnish with fresh cilantro and a squeeze of lime juice before serving.

Notes

For a smoky flavor, grill the jalapeno poppers before adding them to the bowl, or add sliced avocado for extra creaminess.
