This garlic parmesan chicken stew is a comforting and creamy dish packed with tender chicken, fresh garlic, and rich Parmesan cheese, perfect for a hearty meal any day of the week.

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same pot, add onions, garlic, carrots, and celery; sauté until vegetables are softened, about 5 minutes.
  4. Return the chicken to the pot and add chicken broth and dried thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream and Parmesan cheese until cheese is melted and the stew is creamy and heated through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving, if desired.

Notes

For extra richness, add a splash of white wine while sautéing the vegetables, or serve over mashed potatoes or crusty bread to soak up the delicious stew.
