  • 1 medium head of cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1/4 cup vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the mushrooms and cook for 5 minutes until they begin to soften.
  4. Add cauliflower florets to the skillet, stirring well to combine.
  5. Sprinkle thyme, salt, and pepper over the vegetables.
  6. Pour in the vegetable broth, cover the skillet, and cook for 8-10 minutes until the cauliflower is tender.
  7. Remove the lid and cook for another 2 minutes to evaporate excess liquid.
  8. Garnish with fresh parsley before serving.
