Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Mash with milk, sour cream, 1 tablespoon of butter, salt, and pepper until creamy. Keep warm.
  3. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter.
  4. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the beef bites to the skillet, season with salt and pepper, and cook until browned and cooked to your liking, about 4-5 minutes.
  6. Remove from heat and stir in any remaining butter for extra richness.
  7. Serve the garlic butter beef bites over the creamy mashed potatoes, garnished with chopped parsley if desired.

For an added touch, serve with a side of steamed green beans or a crisp green salad to balance the richness of the dish.
