Crustless Bacon Cheese Quiche

A savory and delicious crustless quiche packed with crispy bacon and melted cheese, perfect for a hearty breakfast or brunch option.

  • 6 large eggs
  • 1 cup half-and-half or heavy cream
  • 6 slices bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup diced onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
  2. In a large bowl, whisk together eggs and half-and-half until smooth.
  3. Stir in the salt, pepper, garlic powder, and dried thyme.
  4. Add the crumbled bacon, cheddar cheese, Swiss cheese, and diced onion to the egg mixture. Mix well.
  5. Pour the mixture into the prepared pie dish, spreading it evenly.
  6. Bake in the preheated oven for 30 to 35 minutes, or until the quiche is set and the top is lightly golden.
  7. Remove from oven and let cool slightly before slicing and serving.

Notes

For a veggie boost, add chopped spinach or bell peppers before baking. This quiche can also be made ahead and reheated.
