Crispy Corn Toast Bites are a crunchy, savory snack featuring golden toasted bread topped with a flavorful corn mixture, perfect for parties or a quick bite.

  • 4 slices of white bread, crusts removed
  • 1 cup fresh corn kernels (or frozen, thawed)
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1 small garlic clove, minced
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Using a rolling pin, flatten each slice of bread to about 1/4 inch thickness.
  3. Cut each slice into bite-sized squares or triangles.
  4. In a mixing bowl, combine corn kernels, mayonnaise, Dijon mustard, Parmesan cheese, minced garlic, smoked paprika, salt, and pepper.
  5. Brush both sides of the bread pieces with melted butter and arrange on the prepared baking sheet.
  6. Toast in the oven for 5 minutes on one side, then flip and bake another 5 minutes until golden and crispy.
  7. Remove from oven and top each toast bite with a spoonful of the corn mixture.
  8. Return to oven for an additional 5 minutes to warm the topping slightly.
  9. Garnish with chopped parsley and serve immediately.

Notes

For added heat, sprinkle a pinch of chili flakes on the corn mixture before topping the toast bites.
