Creamy Miso Butter Beans combine tender butter beans with a rich, savory miso butter sauce for a comforting and flavorful plant-based dish perfect as a side or main.

  • 2 cups cooked butter beans (or canned, drained and rinsed)
  • 2 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 1 garlic clove, minced
  • 2 tbsp vegetable broth
  • 1 tsp lemon juice
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the miso paste until fully incorporated with the butter and garlic.
  4. Add the cooked butter beans and vegetable broth, stirring to combine and gently mashing some of the beans to create a creamy texture.
  5. Cook for 5-7 minutes, stirring occasionally, until heated through and sauce thickens slightly.
  6. Remove from heat and stir in lemon juice. Season with salt and black pepper to taste.
  7. Garnish with chopped parsley and serve warm.

Notes

For extra richness, swirl in a tablespoon of cream or coconut cream before serving. Serve alongside steamed rice or crusty bread.
