  • 2 cups cooked white rice
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken breasts and cook until browned and cooked through, about 6-8 minutes.
  3. Add garlic, onion, and sliced bell peppers to the skillet; sauté until vegetables are tender-crisp, about 5 minutes.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for another minute to release the spices’ aroma.
  5. Add cooked rice to the skillet and mix thoroughly to combine all ingredients evenly.
  6. Cook for 2-3 more minutes until heated through.
  7. Remove from heat and garnish with fresh cilantro.
  8. Serve with lime wedges on the side for squeezing over the top.

Notes

For extra flavor, add a dollop of sour cream or sprinkle with shredded cheese before serving.
