Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

  • Fresh cilantro, chopped (for garnish)

Instructions

  2. Add minced garlic and grated ginger; cook for another 2 minutes until fragrant.
  3. Stir in red curry paste, turmeric, cumin, and chili powder; cook for 1 minute to release flavors.
  4. Add rinsed red lentils, coconut milk, and vegetable broth. Stir to combine.
  5. Bring soup to a boil, then reduce heat and simmer uncovered for 25-30 minutes, or until lentils are tender.
  6. Season with salt, pepper, and lime juice. Adjust seasoning as desired.
  7. Serve hot, garnished with fresh cilantro.

Notes

For extra creaminess, blend half the soup and then stir it back in, or serve with a dollop of yogurt or a sprinkle of toasted coconut.
