Chicken Shepherds Pie is a comforting, hearty dish featuring tender chicken and vegetables in a savory gravy, topped with creamy mashed potatoes and baked to golden perfection.

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cups cooked chicken, shredded
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 3 cups mashed potatoes
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • 1 tsp Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until softened.
  3. Add carrots and cook until tender, about 5 minutes.
  4. Stir in shredded chicken and peas.
  5. Sprinkle flour over the mixture and cook, stirring, for 1-2 minutes.
  6. Gradually add chicken broth and milk, stirring constantly until the sauce thickens.
  7. Season with salt, pepper, thyme, and Worcestershire sauce if using.
  8. Transfer the chicken mixture to a baking dish and spread mashed potatoes evenly over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbly.
  10. Let cool for a few minutes before serving.

Notes

For a richer flavor, sprinkle some shredded cheese over the mashed potato topping before baking.
