A flavorful and wholesome Chicken and Rice Bowl combining tender chicken, fluffy rice, and fresh vegetables for a satisfying meal perfect for lunch or dinner.

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon freshly chopped cilantro (optional)
  • Lime wedges for serving

Instructions

  1. Rinse the rice under cold water until water runs clear. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender. Remove from heat and fluff with a fork.
  2. While rice cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with garlic powder, paprika, salt, and pepper.
  3. Cook chicken for 6-8 minutes, stirring occasionally, until golden and cooked through. Remove chicken from skillet and set aside.
  4. In the same skillet, add bell pepper, broccoli, and carrots. Sauté for 5 minutes until vegetables are crisp-tender.
  5. Return chicken to the skillet with vegetables. Stir in soy sauce and cook for an additional 2 minutes, allowing flavors to combine.
  6. To assemble, divide rice into bowls, top with chicken and vegetable mixture. Garnish with green onions, cilantro, and a squeeze of lime juice before serving.

Notes

For extra flavor, marinate the chicken in lime juice and a touch of honey before cooking, or add a sprinkle of crushed red pepper for some heat.
