This Cheesy Crowd-Pleaser Corn Dip blends sweet corn with creamy cheeses and a hint of spice, perfect for parties and casual get-togethers.

  • 2 cups frozen corn, thawed
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 small jalapeño, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the cream cheese, sour cream, and mayonnaise until smooth.
  3. Add the thawed corn, shredded cheddar cheese, jalapeño, garlic powder, paprika, salt, and pepper. Mix well.
  4. Transfer the mixture to a baking dish and spread it evenly.
  5. Bake for 20-25 minutes or until the dip is bubbly and golden on top.
  6. Remove from oven and sprinkle with fresh cilantro before serving.
  7. Serve warm with tortilla chips or fresh vegetables.

Notes

For extra flavor, garnish with diced tomatoes or a squeeze of fresh lime juice before serving.
