  • 1 tablespoon coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • 1 can (14 oz) coconut milk
  • 1 small red bell pepper, sliced
  • 1 small yellow bell pepper, sliced
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in curry powder, turmeric, and paprika; cook for 1 minute to bloom the spices.
  4. Pour in coconut milk and bring mixture to a gentle simmer.
  5. Add sliced bell peppers and cook for 5 minutes until slightly tender.
  6. Season salmon fillets with salt and pepper, then gently place them into the skillet, skin side down if applicable.
  7. Cover and cook for 8-10 minutes, or until salmon is cooked through and flakes easily with a fork.
  8. Remove from heat, squeeze lime juice over the curry, and garnish with fresh cilantro before serving.
