Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook orzo pasta according to package instructions until al dente, drain and set aside.
  3. Steam broccoli florets until tender but still crisp, about 4-5 minutes.
  4. In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to make a roux.
  5. Gradually whisk in milk, cooking and stirring until thickened, about 3-5 minutes.
  6. Remove sauce from heat and stir in garlic powder, onion powder, salt, pepper, and 1 1/2 cups cheddar cheese until melted and smooth.
  7. In a large bowl, combine cooked orzo, steamed broccoli, and cheese sauce. Mix well.
  8. Transfer mixture to a greased baking dish. Sprinkle remaining cheddar cheese and Parmesan on top, and dust with paprika if using.
  9. Bake uncovered for 20-25 minutes, until bubbly and golden on top.
  10. Remove from oven and let cool for 5 minutes before serving.

Notes

For extra crunch, sprinkle breadcrumbs on top before baking or add cooked, diced chicken for a protein boost.
