Chicken Kebabs

Juicy and flavorful chicken kebabs marinated in a blend of spices and grilled to perfection, perfect for a quick and healthy dinner.

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp chili powder (optional)
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine olive oil, garlic, lemon juice, cumin, paprika, coriander, salt, black pepper, and chili powder.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken pieces, bell peppers, and onion wedges alternately onto the skewers.
  6. Grill the kebabs for 10–12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from grill and let rest for 5 minutes before serving.

Notes

Serve with a side of tzatziki sauce or a fresh green salad to enhance the flavors.
