Bang Bang Fried Rice

Bang Bang Fried Rice is a flavorful and spicy twist on traditional fried rice, packed with crunchy vegetables, tender chicken, and a creamy, tangy bang bang sauce that brings a perfect balance of heat and zest.

  • 2 cups cooked jasmine rice, chilled
  • 1 cup cooked chicken breast, diced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded carrots
  • 1/2 cup frozen peas, thawed
  • 2 green onions, sliced
  • 2 eggs, lightly beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon sriracha (adjust for heat preference)
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a small bowl, mix the mayonnaise, sweet chili sauce, sriracha, and soy sauce to prepare the bang bang sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from skillet and set aside.
  3. Add the remaining tablespoon of oil to the skillet. Sauté garlic until fragrant, about 30 seconds.
  4. Add diced red bell pepper, shredded carrots, and peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add the cooked chicken and chilled rice to the skillet. Stir well to combine and cook for another 2-3 minutes, breaking up any clumps.
  6. Return the scrambled eggs to the skillet and stir to mix evenly.
  7. Pour the prepared bang bang sauce over the rice mixture. Stir well to coat all the ingredients with the sauce. Cook for another minute to warm through.
  8. Remove from heat and stir in sliced green onions.
  9. Serve hot, garnished with sesame seeds if desired.

Notes

For a vegetarian version, substitute chicken with firm tofu and add more vegetables like broccoli or snap peas. Serve with a side of fresh cucumber slices for a cooling contrast.
