This Baked Cheesy Dumpling Casserole combines tender dumplings with a rich, melted cheese topping for a comforting and hearty meal perfect for any occasion.

  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Stir in milk and melted butter to form a soft dough. Set aside.
  4. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent and fragrant.
  5. In a large bowl, combine cooked chicken, sautéed onion and garlic, sour cream, black pepper, thyme, and half of the cheddar cheese. Mix well.
  6. Transfer the chicken mixture to the prepared baking dish, spreading evenly.
  7. Drop spoonfuls of dumpling dough over the chicken mixture, covering the surface as evenly as possible.
  8. Sprinkle the remaining cheddar cheese and Parmesan cheese on top.
  9. Bake for 30-35 minutes, until the dumplings are golden and cooked through, and the cheese is bubbly.
  10. Garnish with chopped parsley before serving, if desired.

Notes

For extra flavor, serve with a side of steamed vegetables or a fresh green salad to balance out the richness.
